See how flour is milled the ancient way at the Town Mill then join Giselle Benrimoj to learn three traditional Jewish bread recipes. Proud Gibraltarian Giselle has spent much of her life living and cooking in Andalusia in southern Spain. Giselle worked and trained in kitchens from her teens and has worked as a chef ever since. These delicious breads are made using Giselle’s family recipes.

Itinerary
First session cooking class 10am - 11:30am
After coffee and introductions, the class starts at Strawberry Tree where you will make challah - a soft, brioche-like bread rich in symbolism and history - and chocolate babka bread, a sweet, layered international favourite. While these are proving and baking, you will head over to the Town Mill next door.
Town Mill Tour 11:30am - 12:15pm
Enjoy an exclusive guided tour of the adjoining Town Mill; a pre-Domesday water-powered mill dating back to at least 1340, the time of Edward III. You will visit the stone floor, sack floor and meal floor. A miller will share about the history, restoration and present day working of the Mill and you will enjoy a demonstration of the milling process and how flour is made the traditional way.
You will see the waterwheel in action, powering half-ton millstones grinding grain into flour and have the opportunity to get hands-on, raising a sack hoist and milling grain.
Second session cooking class 12:15pm - 1pm
Back in the Strawberry Tree, Giselle will demonstrate and give you some hands-on tasks as you create torrijas, Spanish-style French toast. You will then glaze and finish off your chocolate babka bread. After the session you will take away your own finished challah bread and some challah dough ready to cook at home, your own finished chocolate babka bread and some babka dough ready to cook at home and some sweet Torrijas dessert.
