Giselle has spent much of her life living and cooking in Andalusia in southern Spain. Giselle worked and trained in kitchens from her teens and has worked as a chef ever since. Coming from a family with a long line of chefs, you can imagine the beautiful recipes and stories that she has inherited.
Tapas is a very fun and informal way of eating in Spain. It consists of a series of small dishes, usually shared around the table, and does not have the structure of a normal meal (like a starter or main course), but is more about grazing and chatting with friends. Itinerary
Cooking class 11am - 1pm
Together you will make three dishes: croquetas - a labour of love, these deep-fried little balls of joy come in many flavours. Fish albóndigas in a rich almond sauce - delicate balls of minced fish in an almond sauce - as Moorish as it comes, and salmorejo - a favourite cold soup. Ideal for lunch any day and easy to make - when you know how.
Break 1pm - 1:10pm
Time for a complimentary glass of wine or a beer! Rest or explore the Town Mill area and all that it has to offer.
Demo class 1:10pm - 1:30pm
Bring your wine back to the classroom and settle down while Giselle demonstrates two further dishes. Mussels 'escabeche' - learn the secrets of the escabeche marinade - a tapa found in every bar from Ferrol to Cádiz followed by Russian salad - a staple on any Spanish table - although the recipe varies from household to household.
Lunch 1:30pm - 2:30pm
It's time to eat! Enjoy the dishes you have created with a communal tapas lunch. Anything left over, you will take home with you.
